3 Easy Keto Dinners My Kids Will Eat Too

Finding a dinner meal that everyone in my family of 6 can enjoy is challenging. Here are 3 Keto Friendly dinners that make the dinner rotation because my kids will actually eat it too. (without complaining!)

 

Crock Pot Ribs

1 rack of plain baby back ribs (about 3 pounds)

1/2 cup of water

1 (18 oz) Stubbs Original Barbecue Sauce

Pour 1/2 cup of water into the bottom of crock pot. Place ribs in the crock pot on top of the water. (I cut my ribs in half to make them fit.) Cook on high for 4 hours or low for 8 hours. Preheat the oven to 375. After crock pot cooking time complete, transfer ribs from crock pot to a baking sheet. Coat them with barbecue sauce. Bake for about 15 minutes.

Helpful Keto Hint: The barbecue sauce is the key to keeping this dinner keto friendly. Choose a low carb/low sugar barbecue sauce.

 

Ham

1 Fully Cooked Ham

It is bizarre how much my kids love ham (pictured above).

Follow the directions on the ham package for conventional oven. (Usually something like put a little water in the bottom of the pan, cover with foil and bake at 350 for 15-20 minutes per pound.)

Helpful Keto Hint: Avoid glazes and sauces.

 

It’s Fajita Night

1 lb boneless skinless (not frozen) chicken breasts

1 (16 oz) pkg frozen fajita vegetables

1 (1 oz) fajita seasoning mix

2 tbls vegetable oil

Fixins’ (lettuce, guacamole, cheese, sour cream, salsa, etc.)

Preheat oven to 400. Spray bottom of 13×9 pan with cooking spray. Cut open bag of frozen vegetables and scatter vegetables on the bottom of the pan. Cut raw chicken into strips and place on top of vegetables. Sprinkle fajita seasoning mix on top of chicken and then drizzle vegetable oil. Mix everything together until everything is coated. Bake for 40 minutes.

Helpful Hint: I took this idea from the internet and most everyone cuts up their own vegetables. That’s not who I am and honestly my family doesn’t know if I cut my own or bought it in a bag. Totally up to you.

Helpful Keto Hint: Don’t use tortillas or chips as a fixin’ for your fajitas. Place your fajita chicken on a bed of lettuce and top with salsa. (Your kids will probably want the tortillas and/or chips.)
